SPICED PEACHES IN CHAMPAGNE
Well it's that time of the year when a young man's fancy turns to...CHAMPAGNE AND PEACHES. This reminds me of the evening when Sister Cook nearly put out her beau's eye with a champagne cork. That was about as close to physical contact as they ever got. Anyway, here's a recipe guaranteed to make you want to lock lips and throw away the key.
Ingredients:
4 medium size fresh peaches, peeled 1 tablespoon lemon juice 2 cups water 8 whole cloves 6 whole allspice 2 sticks cinnamon 2 oz. Neufchatel cheese, softened 1 tablespoon sugar 1 teaspoon skim milk 1/8 teaspoon ground cardamom 1/2 cup dry champagne
Instructions:
Brush peaches with lemon juice and set aside. Combine water and next 3 ingrediants in a large saucepan. Bring to boil and cook 5 minutes. Reduce heat to low and add peaches. Cook until tender. Remove peaches with slotted spoon and let cool. Strain spice mixture, discarding spices. Return liquid to saucepan; cook over medium high heat or until mixture is reduced to 1/2 cup. Remove from heat. Cover and chill. Combine cheese, sugar, milk and cardamom in a small bowl. Stir well until mixture is smooth. Wine is a powerful aphrodisiac, although William Shakespeare in his play Macbeth says of wine, "It provokes the desire but it takes away the performance."
