Turkey Pasta

Preparation time: 30 minutes

Serves 4

Ingredients:

1/2 red bell pepper, chopped

1/4 cup flour

1/2 cup sliced almonds

1/4 cup margarine

6 oz. sliced mushrooms

1/2 - 3/4 quart chicken or turkey stock

1 rib of celery, chopped

Nutmeg

2 cups cubed turkey breast

White pepper

Salt

1 pound of linguini

Saute pepper and celery in butter or oil until they are al dente, then add the almonds and mushrooms and saute briefly.

Make a roux by melting the margerine, then stirring in the flour until smooth. Add stock and blend well. Once the consistency is right, add the turkey and the vegetable and almond mixture. Season with a dash or three of nutmeg, a dash or two of white pepper, and a smidgen of salt.

Cook linguini till al dente and stir in some margarine to keep the noodles from sticking together.

Serve turkey and sauce over hot, cooked linguine.
