Mom's Sweet Potato Pie

(Makes 3 pies)

One large mixing bowl of mashed sweet potatoes

6 eggs

1 cup of half and half

3 cups sugar

1 tsp. salt

1 stick of butter, melted

1 tsp. vanilla extract

1 tsp. lemon extract

Mix all ingredients well. Pour into 3 unbaked pie shells. Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and bake until firm, about 50 minutes.

Serve warm with a dallop of whipped cream.
