Cranberry Cobbler

2 cups whole cranberries

1/4 cup sugar

1/2 cup chopped walnuts or pecans

1/2 cup crushed pineapple with juice

1 dash of freshly grated orange rind

Preheat oven to 350 degrees. Mix cranberries, sugar, nuts, pineapple and orange rind and place in a large, greased casserole dish.

For batter:

1/4 cup sugar

1/4 cup melted butter

1/4 cup plain flour

1 egg, beaten

Mix those four ingredients in a small bowl. Batter will be thin. Pour batter on top of cranberry mixture in baking dish. Bake for 40 minutes or until filling is hot and bubbly and top is golden brown.
