Applesauce CakeHoliday news and informationReader-submitted recipesApplesauce Cake 2 cups sugar 1 stick butter or margarine, softened 2 cups applesauce 2 eggs 3 cups flour 1 box raisins 1 cup walnuts (or more) 2 Tbsp. cocoa 1 tsp. soda 1 tsp. baking powder 1 tsp. cinnamon 1 tsp. allspice 1 tsp. nutmeg 1 tsp. cloves Mix sugar, butter, applesauce and eggs together. In another bowl mix raisins and nuts with the flour. Add the rest of the ingredients to either bowl and then mix all together. Cook in a greased and floured tube cake pan. Cook at 350 degrees for about 1 and 1/2 hours. DO NOT OVERCOOK. Check your cake with a toothpick or cake tester after it has cooked for an hour. This cake will keep for a week or so and gets more moist after a day or two. In fact, we usually make them several days ahead. You may pour caramel sauce over it if you like but we think it stands on its own! — Norce Lowe, Salem |
