Pumpkin PieHoliday news and informationReader-submitted recipesPumpkin Pie 2 cups mashed, cooked pumpkin or winter squash 3/4 cups packed brown sugar 2 Tbsp. molasses 1 1/4 tsp. cinnamon 3/4 tsp. salt 3/4 tsp. nutmeg 3/4 tsp. ginger 3 eggs, beaten 1 (12 oz.) can evaporated milk 9-inch pastry shell In a bowl, combine the first 8 ingredients. Using a wire wisk, stir in the milk. Pour into pie shell and bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 50-55 minutes or until knife inserted near the center comes out clean. Cool. Serve with whipped cream or Kool Whip. — Sue Reavis, Salem |
