Mashed Potato Casserole

8-10 medium potatoes

1 (8 oz.) package softened cream cheese

2 eggs, lightly beaten

2 Tbsp. flour

2 Tbsp. minced parsley

2 Tbsp. minced chives

1 (3.5 oz.) can French-fried onions

Salt and pepper to taste

Peel potatoes, boil and mash until smooth. Add cream cheese and salt and pepper to taste, then beat again until smooth. Add eggs, flour, parsley and chives and mix until smooth.

Spread potato mixture into buttered casserole dish and top with onions. Bake, uncovered, at 325 degrees for 30 minutes.
