A recipe for fools

In the food world, a fool is an old-fashioned English dessert made from a blend of fruit puree and whipped cream.

For the puree: Peel and cut kiwis into quarters. Process in a food processor until you have a rough puree. If you end up with less than one cup of purée, either puree another kiwi or adjust the amount of whipping cream to equal the amount of puree. Transfer puree to a bowl and stir in sugar. If it doesn't taste sweet enough, feel free to add more sugar. Refrigerate for several hours or overnight.

For fool: Place mixing bowl and whisk or whisk attachment in the freezer for about 15 minutes or until very cold. Whip the cream until soft peaks form. Add sugar and continue to whip until stiff peaks form. With a rubber spatula, gently fold in the kiwi purée, leaving some streaks of the white whipping cream. Pour the fool into four long-stemmed parfait or wine glasses. Cover and refrigerate until serving time. Can be made about 4 hours before serving. Garnish with a slice of kiwi fruit.
