Al escuchar la palabra tequila, todos pensamos que este termino se refiere a la tradicional bebida mexicana que se ha popularizado alrededor del mundo no sólo como bebida o aperitivo sino como ingrediente de muchas de las recetas de la gastronomía de este país.
Al pasar por el hermoso estado de Jalisco, al sudoeste del Pacifico mexicano, descubrimos con sorpresa que el nombre de esta bebida proviene del poblado que lleva como nombre Tequila.
"Tequila: Pueblo Mágico" es la frase que usan los lugareños de este lugar donde la industria tequilera es la fuente de la economía local y una razón a sus habitantes para dar a conocer con orgullo su nombre internacionalmente.
Localizado a 60 kilometros de la ciudad de Guadalajara, entre Magdalena y Amatitán, Jalisco es éste un paisaje de llanuras y montañas que se tiñen de un tono azul grisáceo producto de los extensos sembradíos de maguey, un cactus de afiladas pencas de cuyo pulpa se extrae el jugo para la producción del tequila.
Se puede elaborar un libro con las leyendas de Tequila y su bebida, pero la mas popular de ellas habla sobre el mítico principio del origen del maguey y es la historia de un rayo que cayo sobre un agave cociendo el centro y dando inicio al descubrimiento de esta bebida Jalicience.
Otra leyenda cuenta que Quetzalcóatl (deidad prehispánica) seduce a Mayahuel y la invita a ir al Anáhuac. Al llegar a la tierra se convierten en árboles, ella en un floreado Xochichuahutl y Quetzalcóatl en un robusto salsa. La celosa abuela de Mayahuel, al reconocerla en el árbol de flores, la despedazó.
Quetzalcóatl, al ver los restos de su amada los enterró, y de ellos brotó una planta que los indios llaman ¨metl¨ o maguey.
El maguey tiene el espíritu de Mayahuel ...
Muchos de los habitantes de Tequila cuentan otras historias llenas de magia, pero casi todos coinciden que sólo las afiladas lanzas del maguey protegen el verdadero secreto.
Tequila cuenta con museos de historia y casas culturales además de las visitas y degustaciones en la destiladoras. Mundo Cuervo (conocida marca de tequila) es un interesante museo y foro cultural donde se aprecian trabajos de orfebrería, textiles y cerámica entre otros. Famosos artistas mexicanos e internacionales exponen en este museo.
La parroquia de Santiago Apóstol, construida a principios del siglo XVI, podría constituir un proyecto de hallazgos arqueológicos, ya que se cree que está edificada sobre los restos de una pirámide.
Si algún día visita Jalisco, México, durante noviembre y diciembre se ponen de fiesta en Tequila. Mariachis, comida, desfiles, charreadas, actividades culturales y fuegos artificiales entre otros son parte de las festividades con las que se culmina un año de arduo trabajo en la siembra y cosecha del maguey en la producción y destilación del famoso tequila.

Notes from Tequila, Jalisco, Mexico
When we hear the word tequila, most of us think of the traditional Mexican drink that has become widely popular not only as an alcoholic drink or appetizer, but also as a basic ingredient of many recipes of Mexico's gastronomic features.
Driving through the beautiful state of Jalisco on Southwest Mexico´s Pacific coast, we discover with surprise that the name of this popular drink comes from a small and interesting town called Tequila.
"Tequila: Pueblo Mágico" is the phrase its locals use to describe their town where the tequila industry not only is the foundation of the local economy but also is a source for its people to proudly export the name to the rest of the word.
Located 60 kilometers from Guadalajara, between Magdalena and Amatitán, Jalisco, is a landscape of valleys and mountains covered with extensive blue and gray areas, shades given by the plantations of maguey, a cactus with long and sharp leaves that contain the juice that is extracted to produce tequila.
It would take a book to elaborate on all the legends and myths of Tequila and its beverage, but there is one very popular one that tells the story about the magic birth of maguey. It says that lightning struck one of the plants, burning and melting its core, and thus the beverage was discovered.
Another legend tells that Quetzalcoatl (a pre-Hispanic diety) seduces Mayahuel and invites her to go to the Anahuac. When they arrive on Earth they are transformed into trees. She is a flowered Xochichuahutl and he a robust and strong sauce. Mayahuel´s jealous grandmother recognizes her and chops her into pieces.
Quetzalcoatl sees the parts of his beloved one and buries them. From them, a plant grows. The Indians call this plant ¨metl¨ or maguey.
The maguey contains the spirit of mayahuel ...
Many others tell different stories full of magic, but most of them agree that only the sharp and thick leaves protect the secret.
The town of Tequila has museums and cultural centers besides the popular tours and tastings at the distillation plants. In Mundo Cuervo (a well-known tequila maker) is an interesting museum and cultural forum where you can appreciate diverse handicrafts, textiles and pottery examples among other local products. Also famous Mexican and international artists exhibit their works in this museum.
The Church of Santiago Apostol, built at the beginning of the 16th century, could constitute an archeological find now that they believe it was built over the remains of a pyramid.
If some day you visit Jalisco, Mexico, during the months of November and December the people of Tequila enjoy their annual fiesta. Mariachi bands, delicious local dishes, parades, Mexican rodeos, cultural activities and fireworks are part of the festivities that culminate a year of hard work of maguey planting, harvest season and production of the famous tequila.
