Shake It Up Chicken Nuggets

Healthy eating habits start at home, so here's a recipe for chicken nuggets that results in a crispy exterior without the added fat from frying. Try these out on your pickiest eater!
Shake It Up Chicken Nuggets
Makes 16 nuggets
134 cups herb-seasoned crumb stuffing mix
14 cup grated Parmesan cheese
3 Tbsp. margarine
14 cup low-fat buttermilk
14 tsp. ground black pepper
2 boneless, skinless chicken breasts (approximately 1 pound)
1. Preheat oven to 450 degrees.
2. Measure stuffing mix into resealable plastic bag. Seal bag and place on flat surface. Crush crumbs by rolling and pressing rolling pin over bag. Open bag and add Parmesan cheese. Reseal bag and shake to mix thoroughly.
3. Melt margarine in a shallow bowl, then stir in buttermilk and pepper. Set aside.
4. Place rinsed and dried chicken breasts on cutting board. Cut into 16 chunks of equal size (Each chicken breast should give you 8 chunks.)
5. Dip each chunk into the buttermilk mixture, covering all sides. Place 3 dipped chunks at a time into the bag of crumbs. Seal bag tightly and shake until chicken pieces are evenly coated with crumbs.
6. Place coated nuggets on an ungreased baking sheet and bake for 4 minutes. Using tongs, turn over each nugget and bake for an additional 4-5 minutes or until golden brown.
